Farmers markets are in full bloom, and while strawberry season in Maryland typically wraps up in June, there is still time to make the most of those fresh, juicy berries.

This refreshing mocktail, The Gilded Rose, features a homemade strawberry shrub layered with sparkling water and elderflower rose lemonade for a drink that is light, sweet, tart, and perfect for warm-weather gatherings.

For those unfamiliar, a shrub is a drinking vinegar made from fruit, sugar, and vinegar. It creates a bright, tangy syrup that can be used in cocktails, mocktails, and other beverages. The vinegar also acts as a natural preservative while adding depth and complexity to the drink.

Strawberry Shrub Recipe

This recipe uses the cold-process method.

Ingredients

  • 1 part fresh strawberries
  • 1 part prosecco vinegar

  • 1 part turbinado sugar

Instructions

  1. Combine the strawberries and sugar in equal parts by weight.
  2. Stir well, cover, and refrigerate for 24 to 48 hours. The sugar will draw the juice out of the fruit.

  4. Press the fruit through a fine mesh strainer or cheesecloth, extracting as much liquid as possible.
  5. Discard the solids.
  6. Stir in the prosecco vinegar.
  7. Refrigerate for another 24 to 48 hours to allow the flavors to meld.

  9. Store in a sealed jar or bottle in the refrigerator.

  • 1 oz strawberry shrub

  • 2 oz sparkling elderflower and rose lemonade
  • Ice
  • Fresh strawberry slices, for garnish

Instructions

  1. Fill a wine glass or stemless glass with ice.

  4. Top with sparkling water and sparkling elderflower rose lemonade.
  5. Stir gently.
  6. Garnish with fresh strawberry slices.
